Chai Banana Bread

Tasty healthy banana bread with warming chai notes, beautiful together with peanut butter & raspberry chia jam.

Chai Banana Bread

3 ripe bananas, mashed
2 tbsp flaxseed meal and 5 tbsp water (or 2 local organic eggs)
½ cup oat milk or almond milk
2 cups almond meal
1 cup rolled oats
1 ½ tsp Ceylon cinnamon
¾ tsp cardamom
¼ tsp ground ginger
½ tsp nutmeg
1 tsp vanilla extract
¼ tsp sea salt
1 tsp baking powder
2 tbsp erythritol (or coconut sugar)

Pan size: Approx. 20 x 10 cm / 8 x 4 inches

Preheat the oven to 180 C / 350 F degrees. Grease a loaf pan and set it aside. Mix the flaxseed meal and water in a bowl and let thicken for 5 mins. In a big bowl mix all the ingredients. Pour into the loaf pan. Bake for 40 mins or until done inside. Take out of the oven and let cool completely. Serve for example with peanut butter and raspberry chia jam.
